Acacia Honey Syrup

1/2 cup acacia honey
1/4 cup warm water

In a bottle or other container with a tight lid, combine 1/2 cup acacia honey with 1/4 cup of warm water. Shake vigorously until the honey is dissolved.

You might be wondering, wtf is acacia honey? It’s the honey produced by bees who pollinate the flowers of the black locust tree, a type of tree that grows in North America and Europe. Odds are that your regular store bought honey is acacia, and for this syrup that was good enough for me. If you’re inclined to be fancy or experiment, your farmer’s market honey is likely to have a richer, more complex flavour which will affect (and enhance) your final drink!

*Note: the original recipe calls for 2 cups honey and 1 cup warm water, but if you’re just making a few drinks at home, you probably don’t need so much at once, This modified volume should be enough for at least 10 drinks.
